Ingredients:

  • 2 lbs (900g) baby back ribs or spare ribs, membrane removed
  • 2 tablespoons (30ml) olive oil
  • 2 teaspoons (10ml) smoked paprika
  • 1 teaspoon (5ml) garlic powder
  • 1 teaspoon (5ml) onion powder
  • 1 teaspoon (5ml) ground cumin
  • ½ teaspoon (2.5ml) chili powder
  • ½ teaspoon (2.5ml) black pepper
  • ½ teaspoon (2.5ml) salt
  • 1 cup (240ml) apple juice or chicken broth
  • 1 cup (240ml) your favorite BBQ sauce (store-bought or homemade)

Instructions:

  1. Remove the membrane from the back of the ribs. Cut the ribs into sections that fit comfortably in your Instant Pot.
  2. In a small bowl, combine the smoked paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Rub the spice mixture evenly over both sides of the ribs.
  3. Turn on Instant Pot and select Saute mode. Add olive oil and brown ribs on both sides. This step enhances flavor but can be skipped if you're short on time.
  4. Place the trivet in the Instant Pot. Pour in the apple juice or chicken broth. Arrange the ribs in the Instant Pot, standing them on their side for best results (you may need to overlap slightly).
  5. Secure the lid and set the Instant Pot to Manual or Pressure Cook on high pressure for 25 minutes.
  6. Allow the Instant Pot to naturally release pressure for 15 minutes, then manually release any remaining pressure.
  7. Carefully remove the ribs from the Instant Pot and place them on a baking sheet lined with foil. Brush generously with your favorite BBQ sauce.
  8. Broil the ribs for 3-5 minutes, or until the sauce is bubbly and caramelized, watching closely to prevent burning.
  9. Let the ribs rest for a few minutes before serving.
