Ingredients:
- 1.5 lbs Boneless, Skinless Chicken Breast
- 1 cup Chicken Broth
- Salt and pepper, to taste (inferred)
Instructions:
- Place the boneless, skinless chicken breasts into the Instant Pot insert. Pour the chicken broth over the chicken. Season generously with salt and pepper.
- Seal the lid and ensure the pressure valve is set to the Sealing position. Select the Manual or Pressure Cook setting and set the cooking time to 8 minutes on High Pressure. Allow the Instant Pot to build pressure (this takes approximately 10–12 minutes).
- Once the 8 minutes of cooking time is complete, hit Cancel and allow the pressure to naturally release (NR) for 7–10 minutes. This resting period is crucial for retaining moisture. After the rest period, manually release any remaining pressure.
- Carefully open the lid and remove the chicken. Verify that the internal temperature has reached 165°F (74°C) using a meat thermometer. Shred or slice the chicken immediately for use in salads, tacos, or meal prep.
