Ingredients:
- 1.5 kg (approximately 3.3 pounds) boneless, skinless chicken breasts, cut into large chunks
- 1 tbsp (15 ml) olive oil
- 1 medium yellow onion, chopped (approx. 1 cup chopped)
- 2 cloves garlic, minced
- 1 red bell pepper, chopped (approx. 1 cup chopped)
- 1 green bell pepper, chopped (approx. 1 cup chopped)
- 1 (400g / 14oz) can diced tomatoes, undrained
- 1 cup (240 ml) chicken broth
- 1 tbsp (15 ml) chili powder
- 1 tsp (5 ml) cumin
- 1 tsp (5 ml) smoked paprika
- 1/2 tsp (2.5 ml) garlic powder
- 1/2 tsp (2.5 ml) onion powder
- Salt and black pepper to taste
- Taco shells
- Shredded lettuce
- Salsa
- Sour cream
- Shredded cheese
- Cooked rice
- Black beans
- Corn
- Avocado
- Cilantro
- Pasta (penne, fettuccine)
- Alfredo sauce
- Parmesan cheese
- Broccoli florets
- Burger buns
- BBQ sauce
- Coleslaw
- Lettuce cups
- Mayonnaise
- Celery
- Red onion
- Grapes
- Pecans (optional)
Instructions:
- Turn Instant Pot to sauté function. Add olive oil. Sauté onion, garlic, and bell peppers until softened (about 5 minutes).
- Add diced tomatoes, chicken broth, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper to the pot. Stir to combine.
- Place the chicken pieces on top of the tomato mixture. Do not stir.
- Secure the lid and set the Instant Pot to manual/pressure cook for 10 minutes.
- Allow for a natural pressure release for 10 minutes, then manually release any remaining pressure.
- Carefully remove the chicken from the Instant Pot and shred with two forks.
- Return the shredded chicken to the Instant Pot to absorb the sauce.
- Warm taco shells. Fill with shredded chicken, lettuce, salsa, sour cream, and cheese for Chicken Tacos.
- Combine cooked rice, black beans, corn, avocado, shredded chicken, and cilantro in a bowl for Chicken & Black Bean Burrito Bowls.
- Cook pasta according to package directions. Toss with Alfredo sauce, shredded chicken, and broccoli. Top with Parmesan cheese for Chicken Alfredo Pasta.
- Toss shredded chicken with BBQ sauce. Serve on burger buns with coleslaw for BBQ Chicken Sandwiches.
- Combine shredded chicken with mayonnaise, celery, red onion, grapes, and pecans (optional). Serve in lettuce cups for Chicken Salad Lettuce Wraps.
