Ingredients:

  • 150 g (10.5 tbsp) unsalted butter
  • 150 g (1.25 cups) all-purpose flour
  • 60 g (0.5 cups) unsweetened cocoa powder
  • 2 medium eggs
  • 300 g (1.5 cups) dark soft brown sugar
  • 100 g (0.5 cups) dark chocolate chips
  • 100 g (0.5 cups) milk chocolate chips
  • 100 g (0.5 cups) white chocolate chips

Instructions:

  1. Melt Butter: Place butter in a small saucepan over gentle heat until melted. Remove from heat and let cool slightly.
  2. Preheat Oven: Preheat your oven to 180°C (350°F) or 160°C (320°F) for fan ovens.
  3. Prepare Pan: Grease and line the brownie pan.
  4. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour and cocoa powder.
  5. Whisk Eggs & Sugar: Crack eggs into a jug and whisk lightly. Add the sugar and whisk until well combined.
  6. Combine Wet Ingredients: Pour the cooled melted butter into the egg mixture and whisk until smooth.
  7. Combine Wet & Dry Ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined.
  8. Add Chocolate Chips: Fold in dark, milk, and white chocolate chips until evenly distributed.
  9. Spread Batter: Pour brownie batter into the prepared pan, spreading it out to the edges and smoothing the top.
  10. Bake: Bake in the preheated oven for 20-25 minutes until the edges are set; the center should remain gooey.
  11. Cool and Slice: Allow to cool in the pan for a few minutes, then lift out and cut into 16 squares. Enjoy warm or cold!
