Ingredients:
- 24 count King’s Hawaiian Rolls
- 2 tbsp unsalted butter, melted
- 1 tsp Everything Bagel Seasoning
- 1 cup high-quality mayonnaise
- 2 tbsp creamed horseradish
- 1 tbsp fresh chives, finely minced
- 1 tsp garlic paste
- 1.5 lbs shaved roast beef, deli-quality
- 12 slices provolone cheese, halved
- 1 cup baby arugula, washed and dried
- 1/2 cup pickled red onions, drained
Instructions:
- Keep the entire block of 24 rolls intact and use a long serrated knife to slice the entire slab in half horizontally. Set the top half aside.
- In a small bowl, whisk together the mayonnaise, creamed horseradish, chives, and garlic paste to create the Signature Spread.
- Using an offset spatula, apply 3/4 of the spread across the bottom bread slab, ensuring coverage to the very edges to create a moisture seal.
- Layer the halved provolone cheese slices over the spread to create a secondary fat barrier.
- Scrunch the ultra-thin roast beef into ribbons rather than laying it flat, placing it atop the cheese to create air pockets that trap moisture.
- Top with arugula and pickled red onions. Spread the remaining aioli on the underside of the top bun slab and place it on top.
- Brush the top of the rolls with melted butter and sprinkle with Everything Bagel Seasoning before slicing into individual sandwiches.
