Ingredients:

  • 8 oz (227g) cream cheese, softened
  • 1/2 cup (120ml) heavy cream, cold
  • 1/4 cup (50g) erythritol, or your preferred keto sweetener
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • Pinch of sea salt
  • Sugar-free chocolate shavings (optional)
  • Berries (strawberries, raspberries, blueberries – keto-friendly!)(optional)
  • Chopped nuts (almonds, macadamia) (optional)

Instructions:

  1. In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  2. Add the erythritol (or your sweetener), vanilla extract, lemon juice, and salt to the cream cheese. Mix until well combined.
  3. In a separate, clean bowl, whip the heavy cream with an electric mixer until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until everything is evenly combined and light and airy.
  5. Divide the mousse evenly among four serving glasses or bowls. Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the mousse to set slightly. Longer chilling is recommended for a firmer texture.
  6. Before serving, garnish with your choice of toppings, such as sugar-free chocolate shavings, fresh berries, or chopped nuts.
