Ingredients:

  • 2 lbs boneless skinless chicken thighs
  • 2 tbsp extra virgin olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp cayenne pepper

Instructions:

  1. Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Pat the chicken thighs completely dry with paper towels to ensure maximum crispiness.
  3. In a large mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper.
  4. Add the chicken thighs to the bowl and toss until every piece is thoroughly coated in the spice blend.
  5. Arrange the thighs on the prepared baking sheet, leaving space between each piece for airflow.
  6. Bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C) and the edges are deep brown.
  7. Remove from the oven and let the meat rest for 5 minutes before serving to redistribute juices.
