Ingredients:
- 2 lbs boneless skinless chicken thighs
- 2 tbsp extra virgin olive oil
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/4 tsp cayenne pepper
Instructions:
- Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper.
- Pat the chicken thighs completely dry with paper towels to ensure maximum crispiness.
- In a large mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper.
- Add the chicken thighs to the bowl and toss until every piece is thoroughly coated in the spice blend.
- Arrange the thighs on the prepared baking sheet, leaving space between each piece for airflow.
- Bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C) and the edges are deep brown.
- Remove from the oven and let the meat rest for 5 minutes before serving to redistribute juices.
