Ingredients:
- 1 cup warm water
- 1 teaspoon granulated sugar
- 2 teaspoons active dry yeast
- 2 1/2 cups all-purpose flour, plus more for dusting
- 1 teaspoon salt
- 2 tablespoons olive oil, plus more for greasing
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup BBQ sauce
- 1/2 cup BBQ sauce
- 1/2 cup thinly sliced red onion
- 2 cups shredded mozzarella cheese
- 1/4 cup fresh cilantro, chopped
Instructions:
- Combine warm water, sugar, and yeast in a bowl. Let bloom (become foamy).
- Add flour, salt, and olive oil. Mix until a shaggy dough forms.
- Knead until smooth and elastic.
- Place in an oiled bowl, cover, and let rise in a warm place until doubled. (1-2 hours)
- Season chicken cubes with garlic powder, paprika, salt, and pepper.
- Sauté in olive oil until cooked through (internal temp of 165°F/74°C).
- Stir in BBQ sauce. Simmer until slightly thickened.
- Preheat oven to 450°F (230°C).
- Roll out the dough (or stretch pre-made dough) to desired thickness on a lightly floured surface.
- Transfer dough to a baking sheet or pizza stone.
- Spread a thin layer of BBQ sauce over the dough.
- Sprinkle with mozzarella cheese.
- Top with BBQ chicken and red onion slices.
- Add any desired additional mozzarella.
- Bake for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Sprinkle with fresh cilantro. Slice and serve immediately.
