Ingredients:

  • 1 cup warm water
  • 1 teaspoon granulated sugar
  • 2 teaspoons active dry yeast
  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons olive oil, plus more for greasing
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup BBQ sauce
  • 1/2 cup BBQ sauce
  • 1/2 cup thinly sliced red onion
  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Combine warm water, sugar, and yeast in a bowl. Let bloom (become foamy).
  2. Add flour, salt, and olive oil. Mix until a shaggy dough forms.
  3. Knead until smooth and elastic.
  4. Place in an oiled bowl, cover, and let rise in a warm place until doubled. (1-2 hours)
  5. Season chicken cubes with garlic powder, paprika, salt, and pepper.
  6. Sauté in olive oil until cooked through (internal temp of 165°F/74°C).
  7. Stir in BBQ sauce. Simmer until slightly thickened.
  8. Preheat oven to 450°F (230°C).
  9. Roll out the dough (or stretch pre-made dough) to desired thickness on a lightly floured surface.
  10. Transfer dough to a baking sheet or pizza stone.
  11. Spread a thin layer of BBQ sauce over the dough.
  12. Sprinkle with mozzarella cheese.
  13. Top with BBQ chicken and red onion slices.
  14. Add any desired additional mozzarella.
  15. Bake for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  16. Sprinkle with fresh cilantro. Slice and serve immediately.
