Ingredients:
- 2 tablespoons olive oil (30 ml)
- 2 pounds ground beef (900g), preferably 80/20 for flavor
- 1 large yellow onion, chopped (approx. 1 ½ cups or 200g)
- 2 bell peppers (1 red, 1 green), chopped (approx. 2 cups or 250g)
- 2-3 cloves garlic, minced (approx. 1 tablespoon or 10g)
- 1 jalapeño pepper, seeded and minced (optional, for extra heat)
- 3 tablespoons chili powder (45ml)
- 1 tablespoon cumin (15ml)
- 1 teaspoon smoked paprika (5ml)
- ½ teaspoon cayenne pepper (optional, for even MORE heat!) (2.5ml)
- 1 teaspoon dried oregano (5ml)
- 1 teaspoon ground coriander (5ml)
- 1 (28-ounce) can crushed tomatoes (800g)
- 1 (15-ounce) can tomato sauce (425g)
- 1 (15-ounce) can kidney beans, rinsed and drained (425g)
- 1 (15-ounce) can black beans, rinsed and drained (425g)
- 1 cup beef broth (240ml)
- 2 tablespoons apple cider vinegar (30ml)
- 1 tablespoon brown sugar (15g)
- 1 teaspoon salt (5ml)
- ½ teaspoon black pepper (2.5ml)
Instructions:
- Heat olive oil in the Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add the chopped onion and bell peppers to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic and jalapeño (if using) and cook for another minute until fragrant.
- Stir in the chili powder, cumin, smoked paprika, cayenne pepper (if using), oregano, and coriander. Cook for 1 minute, stirring constantly, to bloom the spices and release their flavors.
- Pour in the crushed tomatoes and tomato sauce. Stir well to combine.
- Add the rinsed and drained kidney beans and black beans to the pot. Pour in the beef broth.
- Bring the chili to a simmer, then reduce heat to low, cover, and simmer for at least 2 hours, or up to 3 hours, stirring occasionally. The longer it simmers, the richer the flavor will become.
- During the last 30 minutes of simmering, stir in the apple cider vinegar, brown sugar, salt, and pepper. Taste and adjust seasoning as needed. Add more chili powder for a deeper flavor, cayenne pepper for more heat, or brown sugar for a touch of sweetness.
- Serve hot, garnished with your favorite toppings.
