Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound kielbasa sausage, sliced into ½-inch rounds (450g)
  • 1 medium yellow onion, chopped (approx. 1 cup) (approx. 150g)
  • 4 cloves garlic, minced
  • 1 medium head of green cabbage, cored and shredded (approx. 6 cups) (approx. 700g)
  • 1 teaspoon caraway seeds (5 ml)
  • ½ teaspoon smoked paprika (2.5 ml)
  • ½ cup chicken broth (120 ml)
  • 1 tablespoon apple cider vinegar (15 ml)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add sliced kielbasa and cook until browned on both sides. Remove kielbasa from the skillet and set aside.
  2. Add chopped onion to the skillet and cook until softened and translucent. Add minced garlic and cook until fragrant.
  3. Add shredded cabbage, caraway seeds, and smoked paprika to the skillet. Season with salt and pepper.
  4. Pour in chicken broth and apple cider vinegar. Stir well to combine. Bring to a simmer, then reduce heat, cover, and cook until cabbage is tender, stirring occasionally.
  5. Return kielbasa to the skillet. Stir well and cook until heated through.
  6. Garnish with fresh parsley (if using) and serve hot.
