Ingredients:

  • 1.5 lbs (680g) Tilapia fillets
  • 3 tablespoons (45ml) Olive oil, extra virgin
  • 2 Lemons, zested and juiced
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 teaspoon Dried oregano
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • Lemon wedges, for serving (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
  2. In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, parsley, thyme, oregano, salt, and pepper.
  3. Place the tilapia fillets on the prepared baking sheet. Pour the marinade evenly over the fillets, ensuring they are well coated.
  4. Bake for 12-15 minutes, or until the tilapia is opaque and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
  5. Remove from the oven and serve immediately with lemon wedges, if desired.
