Ingredients:

  • 4 (6 oz) Steelhead trout fillets (170 grams each)
  • 3 tablespoons olive oil (45 ml)
  • Juice and zest of 1 large lemon
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Additional fresh herbs (optional)

Instructions:

  1. In a mixing bowl, combine olive oil, lemon juice, lemon zest, garlic, dill, parsley, salt, and pepper. Whisk until combined.
  2. Place the steelhead trout fillets in a shallow dish. Pour the marinade over the fish, ensuring it’s well-coated. Let it marinate for at least 15 minutes.
  3. Heat the grill to medium-high, ensuring the grates are clean and oiled to prevent sticking.
  4. Carefully place the marinated trout fillets skin-side down on the grill. Cook for 4-5 minutes, then gently flip.
  5. Cook for another 3-4 minutes until the fish flakes easily with a fork or reaches an internal temperature of 145°F (63°C).
  6. Remove the trout from the grill. Serve immediately with lemon wedges and additional fresh herbs, if desired.
