Ingredients:

  • 1 ½ cups all-purpose flour (180g)
  • ½ cup unsalted butter, softened (113g)
  • ¼ cup granulated sugar (50g)
  • 1 large egg, at room temperature
  • Zest of 1 lemon
  • ½ teaspoon baking powder (2g)
  • ¼ teaspoon salt (1g)
  • 1 cup cream cheese, softened (240g)
  • ½ cup powdered sugar (60g)
  • 2 tablespoons freshly squeezed lemon juice (30ml)
  • Zest of 1 lemon

Instructions:

  1. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  2. Add the egg and lemon zest, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually incorporate the dry ingredients into the wet mixture until a dough forms.
  5. Chill the dough in the refrigerator for 30 minutes.
  6. In another bowl, beat together cream cheese, powdered sugar, lemon juice, and lemon zest until smooth and creamy.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Roll out the chilled dough to about ¼-inch thickness on a floured surface.
  9. Use a cookie cutter to cut out circles of dough.
  10. Spoon a dollop of lemon filling onto the center of half of the circles; top with the remaining circles and press edges to seal.
  11. Place the assembled poppers on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  12. Remove from the oven and let cool entirely on a cooling rack.
  13. Dust with powdered sugar before serving, if desired.
