Ingredients:

  • 2 cups Heavy Cream (35% fat)
  • 1/2 cup Granulated Sugar
  • 1/4 cup Fresh Lemon Juice
  • 1 teaspoon Lemon Zest
  • 1 1/2 cups Graham Cracker Crumbs
  • 2 tablespoons Unsalted Butter, melted (optional)
  • 1 cup Heavy Whipping Cream
  • 2 tablespoons Powdered Sugar
  • 1/2 teaspoon Vanilla Extract
  • Lemon slices or zest (optional)
  • Fresh mint leaves (optional)

Instructions:

  1. Combine cream and sugar in a saucepan. Heat over medium heat, stirring occasionally, until sugar dissolves.
  2. Bring the mixture to a gentle simmer. Cook for about 3 minutes, stirring frequently to prevent burning.
  3. Remove from heat and stir in lemon juice and lemon zest. The mixture will thicken slightly.
  4. Pour the posset evenly into the glasses.
  5. Chill in the refrigerator for at least 2 hours, or until set. (It should be jiggly but firm to the touch.)
  6. Crush graham crackers into fine crumbs. Mix with melted butter (optional) and set aside.
  7. Beat heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form. Be careful not to overwhip!
  8. Layer graham cracker crumbs, lemon posset, and whipped cream in the glasses.
  9. Decorate with lemon slices/zest and mint leaves, if desired.
  10. Enjoy immediately or keep chilled until ready to serve.
