Ingredients:
- 2 cups Heavy Cream (35% fat)
- 1/2 cup Granulated Sugar
- 1/4 cup Fresh Lemon Juice
- 1 teaspoon Lemon Zest
- 1 1/2 cups Graham Cracker Crumbs
- 2 tablespoons Unsalted Butter, melted (optional)
- 1 cup Heavy Whipping Cream
- 2 tablespoons Powdered Sugar
- 1/2 teaspoon Vanilla Extract
- Lemon slices or zest (optional)
- Fresh mint leaves (optional)
Instructions:
- Combine cream and sugar in a saucepan. Heat over medium heat, stirring occasionally, until sugar dissolves.
- Bring the mixture to a gentle simmer. Cook for about 3 minutes, stirring frequently to prevent burning.
- Remove from heat and stir in lemon juice and lemon zest. The mixture will thicken slightly.
- Pour the posset evenly into the glasses.
- Chill in the refrigerator for at least 2 hours, or until set. (It should be jiggly but firm to the touch.)
- Crush graham crackers into fine crumbs. Mix with melted butter (optional) and set aside.
- Beat heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form. Be careful not to overwhip!
- Layer graham cracker crumbs, lemon posset, and whipped cream in the glasses.
- Decorate with lemon slices/zest and mint leaves, if desired.
- Enjoy immediately or keep chilled until ready to serve.
