Ingredients:

  • 16 oz (450g) imitation crab meat, flaked or chopped
  • 1 cup (100g) celery, finely diced
  • 1/4 cup (40g) red onion, minced
  • 2 tbsp (8g) fresh parsley, chopped
  • 1/3 cup (80g) light mayonnaise
  • 1/4 cup (60g) plain non-fat Greek yogurt
  • 1 tbsp (15ml) fresh lemon juice
  • 1/2 tsp (3g) Old Bay seasoning
  • 1/4 tsp (1.5g) salt
  • 1/8 tsp (0.5g) cracked black pepper

Instructions:

  1. Break the imitation crab into small, bite-sized pieces using your hands or a knife. In a large mixing bowl, combine the crab, diced celery, minced red onion, and parsley.
  2. In a separate small bowl, stir together the light mayonnaise, Greek yogurt, lemon juice, Old Bay, salt, and pepper until the mixture is a smooth, pale yellow emulsion.
  3. Pour the dressing over the crab mixture. Using a rubber spatula, gently fold the ingredients together until every piece of crab is coated, avoiding over-mixing to keep the pieces intact.
