Ingredients:

  • 1 lb imitation crab meat, chopped into bite-sized pieces
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, minced
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup non-fat plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp Old Bay seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Finely dice the celery and red onion. Pat the imitation crab dry with a paper towel before chopping to prevent wateriness, then combine the crab, celery, and onion in a large mixing bowl.
  2. In a separate small bowl, whisk together the non-fat plain Greek yogurt, lemon juice, Dijon mustard, Old Bay seasoning, salt, and black pepper until the mixture is velvety.
  3. Pour the dressing over the crab mixture and gently fold with a spatula until evenly coated. Fold in the fresh parsley last to maintain a vibrant color.
