Ingredients:
- 1 lb imitation crab meat, chopped into bite-sized pieces
- 2 stalks celery, finely diced
- 1/4 cup red onion, minced
- 2 tbsp fresh parsley, chopped
- 1/2 cup non-fat plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp Old Bay seasoning
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Finely dice the celery and red onion. Pat the imitation crab dry with a paper towel before chopping to prevent wateriness, then combine the crab, celery, and onion in a large mixing bowl.
- In a separate small bowl, whisk together the non-fat plain Greek yogurt, lemon juice, Dijon mustard, Old Bay seasoning, salt, and black pepper until the mixture is velvety.
- Pour the dressing over the crab mixture and gently fold with a spatula until evenly coated. Fold in the fresh parsley last to maintain a vibrant color.
