Ingredients:
- 2 lbs ground beef (80/20 lean-to-fat ratio)
- 1 large egg, beaten
- 1/2 cup almond flour
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, finely chopped
- 2 cups low carb marinara sauce (no added sugar)
- 1 tsp onion powder
- 1/4 tsp crushed red pepper flakes
Instructions:
- In a large bowl, combine the ground beef, beaten egg, almond flour, Parmesan, minced garlic, oregano, salt, pepper, and parsley.
- Gently mix the ingredients by hand until just combined, then roll into 1.5-inch spheres.
- Line the bottom of the slow cooker with a thin layer of marinara sauce to prevent sticking.
- Place the meatballs in a single layer or slightly overlapping in the slow cooker.
- Pour the remaining marinara sauce over the meatballs and sprinkle with onion powder and red pepper flakes.
- Cover and cook on Low for 4 hours or High for 2 hours until the internal temperature reaches 165°F.
