Ingredients:

  • 2 lbs ground beef (80/20 lean-to-fat ratio)
  • 1 large egg, beaten
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, finely chopped
  • 2 cups low carb marinara sauce (no added sugar)
  • 1 tsp onion powder
  • 1/4 tsp crushed red pepper flakes

Instructions:

  1. In a large bowl, combine the ground beef, beaten egg, almond flour, Parmesan, minced garlic, oregano, salt, pepper, and parsley.
  2. Gently mix the ingredients by hand until just combined, then roll into 1.5-inch spheres.
  3. Line the bottom of the slow cooker with a thin layer of marinara sauce to prevent sticking.
  4. Place the meatballs in a single layer or slightly overlapping in the slow cooker.
  5. Pour the remaining marinara sauce over the meatballs and sprinkle with onion powder and red pepper flakes.
  6. Cover and cook on Low for 4 hours or High for 2 hours until the internal temperature reaches 165°F.
