Ingredients:

  • 2 large cloves garlic, minced
  • 1 large egg yolk
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 cup extra virgin olive oil
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions:

  1. Mince the garlic finely and measure out the egg yolk, mustard, lemon juice, and olive oil.
  2. In a mixing bowl, whisk together garlic, egg yolk, Dijon mustard, and lemon juice until smooth.
  3. Slowly drizzle in the olive oil while continuously whisking until a creamy emulsion forms.
  4. Season with salt and freshly cracked black pepper to taste.
  5. Taste the aioli and adjust seasoning if necessary.
