Ingredients:

  • 1/3 cup extra virgin olive oil
  • Juice of 1 large lemon (about 3 tablespoons or 45 ml)
  • 4 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • Fresh parsley, chopped (for garnishing)
  • Lemon wedges (for garnishing)

Instructions:

  1. In a mixing bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and thyme.
  2. Add chicken breasts to the marinade; ensure they are well coated. Seal in a plastic storage bag or place in a shallow dish and refrigerate for at least 30 minutes (up to overnight for more flavor).
  3. Preheat grill over medium-high heat (about 400°F or 204°C).
  4. Remove chicken from marinade and let excess drip off. Place chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and juices run clear.
  5. Remove chicken from the grill and let rest for 5 minutes. Serve garnished with chopped parsley and lemon wedges.
