- 2 cups cooked chicken, shredded (about 450g)
- 1 cup plain Greek yogurt (240g)
- ¼ cup celery, finely chopped (30g)
- ¼ cup red onion, finely chopped (30g)
- 1 cup red grapes, halved (150g)
- 2 tablespoons fresh parsley, chopped (8g)
- 1 tablespoon fresh dill, chopped (5g)
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Whole grain bread or lettuce leaves for serving (optional)
Instructions:
- Shred the cooked chicken into bite-sized pieces.
- In a large mixing bowl, combine Greek yogurt, Dijon mustard, salt, and pepper.
- Incorporate finely chopped celery, red onion, and grapes into the yogurt mixture.
- Add the shredded chicken and fresh herbs (parsley and dill) to the bowl.
- Gently mix until all ingredients are well-coated in the yogurt dressing.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
