Ingredients:

  • 2 cups cooked chicken, shredded (about 450g)
  • 1 cup plain Greek yogurt (240g)
  • ¼ cup celery, finely chopped (30g)
  • ¼ cup red onion, finely chopped (30g)
  • 1 cup red grapes, halved (150g)
  • 2 tablespoons fresh parsley, chopped (8g)
  • 1 tablespoon fresh dill, chopped (5g)
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Whole grain bread or lettuce leaves for serving (optional)

Instructions:

  1. Shred the cooked chicken into bite-sized pieces.
  2. In a large mixing bowl, combine Greek yogurt, Dijon mustard, salt, and pepper.
  3. Incorporate finely chopped celery, red onion, and grapes into the yogurt mixture.
  4. Add the shredded chicken and fresh herbs (parsley and dill) to the bowl.
  5. Gently mix until all ingredients are well-coated in the yogurt dressing.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
