Ingredients:

  • 3 ripe bananas, mashed (approximately 1 ½ cups or 360g)
  • 1/3 cup (75g) unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 1 large egg, beaten
  • 1 tsp (5ml) vanilla extract
  • 1 tsp (5g) baking soda
  • Pinch of salt
  • 1 cup (125g) all-purpose flour
  • 1 tsp (2g) ground cinnamon (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and prepare the muffin tin by lining it with muffin liners or greasing it lightly.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Mix in the melted butter until combined.
  4. Stir in the granulated sugar, beaten egg, and vanilla extract until incorporated.
  5. Sprinkle the baking soda and salt over the mixture and stir gently.
  6. Gradually add the all-purpose flour and ground cinnamon, folding until just combined (do not overmix).
  7. Divide the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes until golden brown and a toothpick inserted in the center comes out clean.
  9. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
