Ingredients:
- 3 ripe bananas, mashed (approximately 1 ½ cups or 360g)
- 1/3 cup (75g) unsalted butter, melted
- 1/2 cup (100g) granulated sugar
- 1 large egg, beaten
- 1 tsp (5ml) vanilla extract
- 1 tsp (5g) baking soda
- Pinch of salt
- 1 cup (125g) all-purpose flour
- 1 tsp (2g) ground cinnamon (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and prepare the muffin tin by lining it with muffin liners or greasing it lightly.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Mix in the melted butter until combined.
- Stir in the granulated sugar, beaten egg, and vanilla extract until incorporated.
- Sprinkle the baking soda and salt over the mixture and stir gently.
- Gradually add the all-purpose flour and ground cinnamon, folding until just combined (do not overmix).
- Divide the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes until golden brown and a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
