Ingredients:

  • 6 oz baby spinach or mixed spring greens
  • 1.5 cups fresh mulberries
  • 4 oz goat cheese
  • 0.5 cup raw walnuts
  • 0.25 cup red onion
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 0.25 tsp sea salt
  • 0.125 tsp black pepper

Instructions:

  1. Combine the olive oil, balsamic vinegar, honey, mustard, salt, and pepper in a mason jar. Shake vigorously for 30 seconds until the mixture thickens and becomes opaque.
  2. Place the mixed greens in a large bowl. Add the sliced red onion and gently fold in the mulberries.
  3. Drizzle half of the dressing over the greens and toss lightly using tongs until the leaves are glistening.
  4. Top the dressed greens with the crumbled goat cheese and chopped walnuts. Drizzle the remaining vinaigrette directly over the cheese and nuts.
