Ingredients:
- 6 oz baby spinach or mixed spring greens
- 1.5 cups fresh mulberries
- 4 oz goat cheese
- 0.5 cup raw walnuts
- 0.25 cup red onion
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- 0.25 tsp sea salt
- 0.125 tsp black pepper
Instructions:
- Combine the olive oil, balsamic vinegar, honey, mustard, salt, and pepper in a mason jar. Shake vigorously for 30 seconds until the mixture thickens and becomes opaque.
- Place the mixed greens in a large bowl. Add the sliced red onion and gently fold in the mulberries.
- Drizzle half of the dressing over the greens and toss lightly using tongs until the leaves are glistening.
- Top the dressed greens with the crumbled goat cheese and chopped walnuts. Drizzle the remaining vinaigrette directly over the cheese and nuts.
