- 250 g Chocolate Sandwich Biscuits (e.g., Oreos), filling included
- 115 g Unsalted Butter, melted
- 450 g Full-Fat Cream Cheese, softened to room temperature
- 340 g Creamy Peanut Butter (standard style)
- 240 g Powdered Sugar, sifted
- 1 tsp Pure Vanilla Extract
- 475 ml Cold Heavy Cream (Double Cream)
- 50 g Dark Chocolate (70% cocoa), shaved or coarsely chopped (for garnish)
- 1 Tbsp Roasted Peanuts, finely chopped (optional, for garnish)
Instructions:
- Prepare the Biscuits: Pulse the chocolate biscuits in a food processor until fine crumbs form. Alternatively, crush them thoroughly inside a large sealed bag using a rolling pin.
- Mix the Base: Transfer the crumbs to a bowl and pour in the melted butter. Stir thoroughly until all crumbs are evenly moistened and resemble wet sand.
- Press the Crust: Press the mixture firmly and evenly into the bottom and up the sides of a 9-inch pie dish. Chill the crust in the freezer for 15 minutes or the refrigerator for 30 minutes.
- Cream the Base: Using an electric mixer, beat the room-temperature cream cheese until light and fluffy (about 2 minutes). Scrape down the bowl.
- Incorporate Peanut Butter: Add the creamy peanut butter and vanilla extract to the bowl. Beat on medium speed until the mixture is completely smooth and uniform.
- Add Sweetness: Gradually add the sifted powdered sugar, mixing on low speed until fully incorporated.
- Whip the Cream: In a separate, clean bowl, pour the cold heavy cream and whip on high speed until stiff peaks form. Be careful not to over-whip.
- Lighten the Filling: Take about one-third of the whipped cream and fold it gently into the peanut butter mixture using a rubber spatula.
- Fold Gently: Add the remaining whipped cream and fold gently until just combined, ensuring no white streaks of cream are visible. Avoid over-mixing.
- Fill and Chill: Spoon the filling evenly into the chilled crust. Cover the pie loosely and refrigerate for a minimum of 6 hours, or ideally overnight, until the filling is firm.
- Garnish and Serve: Just before serving, sprinkle the top generously with dark chocolate shavings and chopped peanuts, if desired. Slice using a sharp, warm knife.
