  • 115 g Unsalted Butter, melted
  • 450 g Full-Fat Cream Cheese, softened to room temperature
  • 340 g Creamy Peanut Butter (standard style)
  • 240 g Powdered Sugar, sifted
  • 1 tsp Pure Vanilla Extract
  • 475 ml Cold Heavy Cream (Double Cream)
  • 50 g Dark Chocolate (70% cocoa), shaved or coarsely chopped (for garnish)
  • 1 Tbsp Roasted Peanuts, finely chopped (optional, for garnish)

Instructions:

  1. Prepare the Biscuits: Pulse the chocolate biscuits in a food processor until fine crumbs form. Alternatively, crush them thoroughly inside a large sealed bag using a rolling pin.
  2. Mix the Base: Transfer the crumbs to a bowl and pour in the melted butter. Stir thoroughly until all crumbs are evenly moistened and resemble wet sand.
  3. Press the Crust: Press the mixture firmly and evenly into the bottom and up the sides of a 9-inch pie dish. Chill the crust in the freezer for 15 minutes or the refrigerator for 30 minutes.
  4. Cream the Base: Using an electric mixer, beat the room-temperature cream cheese until light and fluffy (about 2 minutes). Scrape down the bowl.
  5. Incorporate Peanut Butter: Add the creamy peanut butter and vanilla extract to the bowl. Beat on medium speed until the mixture is completely smooth and uniform.
  6. Add Sweetness: Gradually add the sifted powdered sugar, mixing on low speed until fully incorporated.
  7. Whip the Cream: In a separate, clean bowl, pour the cold heavy cream and whip on high speed until stiff peaks form. Be careful not to over-whip.
  8. Lighten the Filling: Take about one-third of the whipped cream and fold it gently into the peanut butter mixture using a rubber spatula.
  9. Fold Gently: Add the remaining whipped cream and fold gently until just combined, ensuring no white streaks of cream are visible. Avoid over-mixing.
  10. Fill and Chill: Spoon the filling evenly into the chilled crust. Cover the pie loosely and refrigerate for a minimum of 6 hours, or ideally overnight, until the filling is firm.
  11. Garnish and Serve: Just before serving, sprinkle the top generously with dark chocolate shavings and chopped peanuts, if desired. Slice using a sharp, warm knife.
