Ingredients:
- 240g rolled oats (old fashioned)
- 125g whole wheat flour
- 10g baking powder
- 5g ground cinnamon
- 2g ground ginger
- 1.5g sea salt
- 2 large eggs
- 120ml unsweetened applesauce
- 120g plain Greek yogurt
- 80ml pure maple syrup
- 5ml vanilla extract
- 300g fresh apples, cored and diced
- 50g walnuts, chopped
Instructions:
- Preheat your oven to 350°F (175°C). Line the bottom of an 8-inch square baking pan with parchment paper and lightly grease the sides.
- In a large mixing bowl, whisk together the eggs, maple syrup, Greek yogurt, unsweetened applesauce, and vanilla extract until the mixture is uniform and smooth.
- Gently fold the rolled oats, whole wheat flour, baking powder, sea salt, cinnamon, and ginger into the wet ingredients. Allow the batter to sit for 10 minutes to hydrate the oats.
- Fold the diced apples and chopped walnuts into the batter until evenly distributed.
- Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with only a few moist crumbs.
- Allow the cake to cool in the pan for at least 15 minutes before slicing and serving.
