Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) packed brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 cup (125g) all-purpose flour
- 3 cups (270g) old-fashioned rolled oats
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1 1/2 cups (255g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- Beat the softened butter, brown sugar, and granulated sugar until the mixture looks pale and fluffy.
- Stir in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Slowly fold the dry ingredients into the butter mixture.
- Stir in the rolled oats until no streaks of flour remain.
- Fold in the semi-sweet chocolate chips until evenly distributed.
- Press the dough firmly into the prepared baking pan.
- Bake for 20 minutes or until the edges are a deep golden brown and the center is set but slightly soft to the touch.
- Let the bars cool completely in the pan before slicing.
