Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 cup (125g) all-purpose flour
  • 3 cups (270g) old-fashioned rolled oats
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (3g) salt
  • 1 1/2 cups (255g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
  2. Beat the softened butter, brown sugar, and granulated sugar until the mixture looks pale and fluffy.
  3. Stir in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Slowly fold the dry ingredients into the butter mixture.
  6. Stir in the rolled oats until no streaks of flour remain.
  7. Fold in the semi-sweet chocolate chips until evenly distributed.
  8. Press the dough firmly into the prepared baking pan.
  9. Bake for 20 minutes or until the edges are a deep golden brown and the center is set but slightly soft to the touch.
  10. Let the bars cool completely in the pan before slicing.
