  • 2 large sweet potatoes (approx. 800g), peeled and cut into 1/2-inch cubes
  • 2 tbsp extra virgin olive oil
  • 1 tbsp unsalted butter
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 tsp maple syrup

Instructions:

  1. Wash, peel, and dice the sweet potatoes into uniform 1/2-inch cubes or 1/4-inch slices for even cooking.
  2. Heat oil in a 12-inch skillet over medium-high heat. Add sweet potatoes in a single layer, ensuring the pan is not overcrowded to prevent steaming.
  3. Brown the first side for 3-5 minutes, then toss. Reduce heat to medium, add 1 tablespoon of water, and cover with a lid for 4-5 minutes to soften the centers.
  4. Remove the lid and increase heat slightly. Add butter and seasonings (salt, pepper, paprika, and garlic powder). Sauté for 5-8 minutes until fork-tender with a golden-brown crust.
  5. Drizzle maple syrup over the potatoes in the final 60 seconds of cooking. Toss to coat and serve immediately.
