Ingredients:

  • 6 ounces (170g) finely grated Parmesan cheese
  • Optional: Pinch of freshly ground black pepper
  • Optional: Pinch of dried herbs (Italian mix, rosemary, thyme)

Instructions:

  1. Preheat oven to 375°F (190°C). Position a rack in the center of the oven.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Spoon or sprinkle approximately 1 tablespoon (or 15g) of grated Parmesan cheese onto the prepared baking sheet, spacing them about 1-2 inches apart. Aim for uniform, flat circles.
  4. If using, sprinkle a tiny pinch of black pepper or dried herbs over each mound of cheese.
  5. Bake in the preheated oven for 5-8 minutes, or until the cheese is melted, golden brown around the edges, and slightly bubbly.
  6. Remove the baking sheet from the oven and let the crisps cool on the baking sheet for a few minutes until they firm up slightly. Then, carefully transfer them to a wire rack to cool completely.
  7. Once cooled and crisp, serve immediately. Store in an airtight container at room temperature for up to 2 days.
