Ingredients:
- 1 cup (226g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 cup (240ml) heavy cream or milk
- 1 cup (250g) creamy peanut butter
- 1 teaspoon (5ml) vanilla extract
- Pinch of salt
Instructions:
- In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until light and fluffy. This should take about 2-3 minutes.
- Gradually add the sifted powdered sugar, one cup at a time, beating on low speed until combined. Scrape down the sides of the bowl as needed to ensure everything is well incorporated.
- Add the heavy cream (or milk) and vanilla extract. Beat on medium speed until smooth and creamy.
- Add the peanut butter and salt. Beat on medium speed until the icing is smooth, light, and fluffy. Taste and adjust for sweetness or saltiness as needed.
- Use immediately to frost your favorite cupcakes, cakes, or other desserts.
