Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 cup (240ml) heavy cream or milk
  • 1 cup (250g) creamy peanut butter
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt

Instructions:

  1. In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until light and fluffy. This should take about 2-3 minutes.
  2. Gradually add the sifted powdered sugar, one cup at a time, beating on low speed until combined. Scrape down the sides of the bowl as needed to ensure everything is well incorporated.
  3. Add the heavy cream (or milk) and vanilla extract. Beat on medium speed until smooth and creamy.
  4. Add the peanut butter and salt. Beat on medium speed until the icing is smooth, light, and fluffy. Taste and adjust for sweetness or saltiness as needed.
  5. Use immediately to frost your favorite cupcakes, cakes, or other desserts.
