Ingredients:

  • 1 cup (240ml) Heavy Cream, cold (minimum 36% milk fat)
  • 2-3 Tablespoons (25-38g) Powdered Sugar (Icing Sugar), adjust to taste
  • ½ teaspoon (2.5ml) Vanilla Extract, pure vanilla extract

Instructions:

  1. Place the mixing bowl and beaters in the freezer for at least 15 minutes. This is crucial for success!
  2. Pour the cold heavy cream, powdered sugar, and vanilla extract into the chilled mixing bowl.
  3. Start the mixer on medium speed and beat until soft peaks form. Watch carefully, this happens quickly!
  4. Increase the speed to medium-high and continue beating until stiff peaks form. Stiff peaks hold their shape when the beaters are lifted.
  5. Be careful not to overbeat the cream, as it can turn into butter. Stop mixing as soon as stiff peaks form.
  6. Serve immediately or refrigerate in an airtight container for up to 24 hours. Keep refrigerated!
