Ingredients:

  • 1 medium spaghetti squash (approx. 2-3 lbs / 900g - 1.3kg)
  • 1-2 tablespoons olive oil
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper (plus more to taste)
  • Optional: 1/4 teaspoon garlic powder or other spices of your choice

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Carefully halve the spaghetti squash lengthwise. Scoop out and discard the seeds.
  3. Drizzle the cut sides with olive oil, and season generously with salt, pepper, and any optional spices.
  4. Place the squash cut-side down on the prepared baking sheet.
  5. Roast for 45-60 minutes, or until the squash is easily pierced with a fork and the skin gives slightly when pressed.
  6. Remove from the oven and let cool slightly. Use a fork to shred the flesh into spaghetti-like strands.
  7. Season to taste and serve hot.
