Ingredients:
- 1 medium spaghetti squash (approx. 2-3 lbs / 900g - 1.3kg)
- 1-2 tablespoons olive oil
- 1/2 teaspoon salt (plus more to taste)
- 1/4 teaspoon black pepper (plus more to taste)
- Optional: 1/4 teaspoon garlic powder or other spices of your choice
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Carefully halve the spaghetti squash lengthwise. Scoop out and discard the seeds.
- Drizzle the cut sides with olive oil, and season generously with salt, pepper, and any optional spices.
- Place the squash cut-side down on the prepared baking sheet.
- Roast for 45-60 minutes, or until the squash is easily pierced with a fork and the skin gives slightly when pressed.
- Remove from the oven and let cool slightly. Use a fork to shred the flesh into spaghetti-like strands.
- Season to taste and serve hot.
