Ingredients:
- 4 cups (or 1 kilogram) Watermelon, cubed (seedless variety preferred)
- 2 Tablespoons Fresh Lime Juice
- ¼ cup Filtered Water (Optional, only if melon is dry)
- 6–8 Fresh Mint Leaves, loosely packed, for blending
- 1–2 Tablespoons Sweetener (Optional: simple syrup, agave nectar, or honey)
- Ice (As needed, for serving)
Instructions:
- Prepare the Watermelon: Cut the watermelon in half, scoop out the flesh, and dice it into roughly 1-inch (2.5 cm) cubes. Ensure any large seeds are removed.
- Juice the Lime: Halve the lime and extract the juice. Set aside.
- Muddle the Mint (Optional): Gently muddle the mint leaves in the bottom of the blender jug with the lime juice. This releases the essential oils without shredding the leaves too finely.
- Combine Ingredients: Add the cubed watermelon, the lime juice, the muddled mint, and the optional sweetener/water to the blender jug.
- Blend: Start on a low speed and gradually increase to high. Blend until the mixture is completely liquid and smooth, approximately 30–45 seconds. Do not over-blend, as this can incorporate too much air.
- Taste Test: Sample a small amount. Adjust the flavor now—add more lime juice for tang, or more sweetener for richness, blending briefly to incorporate.
- Strain for Clarity: Place the fine-mesh sieve over a large, clean jug or bowl. Pour the blended mixture through the sieve. Use the back of a spoon to gently press the solids and extract all the remaining liquid. Discard the pulp.
- Chill and Rest: Cover the jug and transfer the juice to the refrigerator for at least 30 minutes. Serving the juice properly chilled significantly enhances the flavor.
- Serve: Fill serving glasses with plenty of ice. Pour the cold watermelon refresher over the ice. Garnish with a fresh mint sprig or a thin lime wheel.
