Ingredients:

  • 1 pound (450g) fresh green beans, trimmed
  • 4 cups (950ml) water
  • 1 teaspoon salt, plus more for seasoning
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon (15ml) fresh lemon juice
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Wash and trim the green beans.
  2. Bring water and 1 teaspoon salt to a boil in a large pot. Add green beans and cook for 3-5 minutes, until bright green and crisp-tender.
  3. Immediately drain the beans and plunge them into a bowl of ice water to stop the cooking process.
  4. In a small bowl, whisk together olive oil, minced garlic, lemon juice, salt, pepper, and red pepper flakes (if using).
  5. Drain the green beans and pat them dry. Toss them with the vinaigrette. Serve immediately.
