Ingredients:
- 1 pound (450g) fresh green beans, trimmed
- 4 cups (950ml) water
- 1 teaspoon salt, plus more for seasoning
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced
- 1 tablespoon (15ml) fresh lemon juice
- 1/4 teaspoon black pepper
- Pinch of red pepper flakes (optional)
Instructions:
- Wash and trim the green beans.
- Bring water and 1 teaspoon salt to a boil in a large pot. Add green beans and cook for 3-5 minutes, until bright green and crisp-tender.
- Immediately drain the beans and plunge them into a bowl of ice water to stop the cooking process.
- In a small bowl, whisk together olive oil, minced garlic, lemon juice, salt, pepper, and red pepper flakes (if using).
- Drain the green beans and pat them dry. Toss them with the vinaigrette. Serve immediately.
