Ingredients:
- 4 medium sweet potatoes, scrubbed clean (approximately 6-8 oz/170-225g each)
- 1 tablespoon olive oil (15ml)
- 1/2 teaspoon kosher salt (2.5g)
- 1/4 teaspoon black pepper (1g)
- 1/2 cup (1 stick) unsalted butter, softened (113g)
- 2 tablespoons maple syrup (30ml)
- 1 teaspoon ground cinnamon (2.5g)
- 1/4 teaspoon ground nutmeg (0.5g)
- Pinch of kosher salt (optional)
Instructions:
- Preheat oven to 375°F (190°C).
- Pierce each sweet potato several times with a fork.
- Rub each sweet potato with olive oil, then sprinkle with salt and pepper.
- Place sweet potatoes on a baking sheet (lined with foil for easy cleanup, if desired) and bake for 60-90 minutes, or until very soft and easily pierced with a fork. The internal temperature should reach 205-215°F (96-102°C).
- In a small bowl, combine softened butter, maple syrup, cinnamon, nutmeg, and salt (if using). Beat with a mixer until light and fluffy, or simply mash together with a fork until well combined.
- Remove sweet potatoes from the oven. Slice open each sweet potato lengthwise and top generously with cinnamon-maple butter. Serve immediately.
