Ingredients:

  • 1 medium spaghetti squash (approximately 2-3 pounds or 900g-1.4kg)
  • 1 tablespoon olive oil (15ml)
  • ½ teaspoon salt (2.5ml)
  • ¼ teaspoon black pepper (1.25ml)
  • Optional: ½ teaspoon garlic powder (2.5ml), or other desired seasonings

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash the spaghetti squash. Carefully cut the squash in half lengthwise. Scrape out the seeds and stringy fibers.
  3. Drizzle the cut sides of the squash with olive oil. Sprinkle with salt, pepper, and any optional seasonings.
  4. Place the squash cut-side down on a baking sheet. Roast for 45-60 minutes, or until the squash is easily pierced with a fork and the skin gives slightly to pressure.
  5. Remove from oven and let cool slightly. Use a fork to scrape the flesh, creating spaghetti-like strands.
  6. Serve immediately.
