Ingredients:
- 1 lb English cucumber, thinly sliced
- 50g red onion, thinly shaved
- 1 tsp kosher salt
- 1/3 cup rice vinegar
- 1 tbsp maple syrup
- 1 tsp toasted sesame oil
- 1/2 tsp garlic powder
- 2 tbsp fresh dill, chopped
- 1 tsp toasted sesame seeds
- 1/4 tsp red pepper flakes
Instructions:
- Place the sliced cucumbers and shaved red onions in a large bowl.
- Sprinkle the kosher salt evenly over the vegetables and toss to coat.
- Let the mixture sit for 15–20 minutes to draw out excess water.
- Pour the mixture into a colander and gently pat dry with a paper towel.
- In a small bowl, whisk together the rice vinegar, maple syrup, garlic powder, and sesame oil until smooth and glossy.
- Return the dried cucumbers and onions to the bowl or transfer them to a glass container.
- Pour the brine over the vegetables, tossing gently to ensure every slice is submerged.
- Fold in the fresh dill, sesame seeds, and red pepper flakes.
- Cover and refrigerate for at least 30 minutes before serving.
