Ingredients:

  • 1 lb cooked chicken breast, shredded or cubed
  • 10.5 oz cream of chicken soup
  • 1 cup full fat sour cream
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp black pepper
  • 2 tbsp poppy seeds
  • 1.5 sleeves Ritz crackers, hand crushed
  • 0.5 cup unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F. Note: A fully calibrated oven ensures the crackers don't burn before the center is hot.
  2. In a large bowl, whisk the 10.5 oz cream of chicken soup, 1 cup sour cream, 0.5 tsp garlic powder, 0.5 tsp onion powder, and 0.25 tsp black pepper.
  3. Add the 1 lb cooked chicken and 1.5 tbsp poppy seeds into the mixture. Stir until the chicken is fully coated and velvety.
  4. Spread the chicken mixture evenly into your 9x13 inch dish.
  5. Hand crush 1.5 sleeves of Ritz style crackers into a separate bowl. Keep pieces about the size of a dime.
  6. Combine the 0.5 cup melted butter with the remaining 0.5 tbsp poppy seeds.
  7. Pour the butter over the crackers and toss gently. Note: You want the crackers to be coated but not soggy.
  8. Sprinkle the buttery crackers over the chicken base in an even layer.
  9. Place in the oven for 30 mins until the edges are bubbling and the top is golden brown and shattering.
