Ingredients:
- 1 1/2 cups (135g) chocolate wafer cookies (like Oreos, without the filling), finely crushed
- 1 (3.4 ounce) package instant vanilla pudding mix
- 1 1/2 cups (355 ml) milk (whole or 2%)
- 1 cup (240 ml) pumpkin puree (not pumpkin pie filling)
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon ground cinnamon
- 1/4 cup (50g) packed light brown sugar
- Candy pumpkins (approximately 18-24, depending on size)
- Gummy worms (optional)
- Chocolate shavings (optional)
Instructions:
- Finely crush the chocolate wafer cookies using a food processor or in a zip-top bag with a rolling pin. Set aside.
- In a mixing bowl, whisk together the vanilla pudding mix and milk until combined.
- Stir in the pumpkin puree, pumpkin pie spice, cinnamon, and brown sugar. Whisk until smooth and well combined.
- Layer the crushed cookies and pumpkin pudding in the glasses, alternating between layers. Start and end with a layer of crushed cookies.
- Top each cup with candy pumpkins. Add gummy worms and chocolate shavings, if desired.
- Refrigerate for at least 30 minutes to allow the pudding to set slightly. Serve chilled.
