Ingredients:

  • 1 1/2 cups (135g) chocolate wafer cookies (like Oreos, without the filling), finely crushed
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1 1/2 cups (355 ml) milk (whole or 2%)
  • 1 cup (240 ml) pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup (50g) packed light brown sugar
  • Candy pumpkins (approximately 18-24, depending on size)
  • Gummy worms (optional)
  • Chocolate shavings (optional)

Instructions:

  1. Finely crush the chocolate wafer cookies using a food processor or in a zip-top bag with a rolling pin. Set aside.
  2. In a mixing bowl, whisk together the vanilla pudding mix and milk until combined.
  3. Stir in the pumpkin puree, pumpkin pie spice, cinnamon, and brown sugar. Whisk until smooth and well combined.
  4. Layer the crushed cookies and pumpkin pudding in the glasses, alternating between layers. Start and end with a layer of crushed cookies.
  5. Top each cup with candy pumpkins. Add gummy worms and chocolate shavings, if desired.
  6. Refrigerate for at least 30 minutes to allow the pudding to set slightly. Serve chilled.
