Ingredients:
- 500 g turkey breast mince
- 500 g cooked brown rice
- 2 large eggs, beaten
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 100 g frozen peas
- 2 spring onions, finely sliced
- Fresh coriander, chopped
- Sliced red chillies, optional
Instructions:
- Stir-fry turkey mince in a wok over high heat for 4 minutes until browned.
- Incorporate the cooked brown rice, and stir-fry together for 2 minutes.
- Create a well in the center of the mixture, pour in the beaten eggs, and let cook for 45 seconds before stirring into the mixture.
- Stir in the frozen peas and continue to stir-fry for another 2 minutes, until peas are heated and the mixture has crispy bits.
- Drizzle in soy sauce and sesame oil, and add spring onions. Mix well and turn off the heat.
- Garnish with coriander and extra spring onions or sliced red chillies, if desired.
