Ingredients:

  • 500 g turkey breast mince
  • 500 g cooked brown rice
  • 2 large eggs, beaten
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 100 g frozen peas
  • 2 spring onions, finely sliced
  • Fresh coriander, chopped
  • Sliced red chillies, optional

Instructions:

  1. Stir-fry turkey mince in a wok over high heat for 4 minutes until browned.
  2. Incorporate the cooked brown rice, and stir-fry together for 2 minutes.
  3. Create a well in the center of the mixture, pour in the beaten eggs, and let cook for 45 seconds before stirring into the mixture.
  4. Stir in the frozen peas and continue to stir-fry for another 2 minutes, until peas are heated and the mixture has crispy bits.
  5. Drizzle in soy sauce and sesame oil, and add spring onions. Mix well and turn off the heat.
  6. Garnish with coriander and extra spring onions or sliced red chillies, if desired.
