Ingredients:

  • 4 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 1 cup frozen mixed vegetables (peas, carrots, and corn)
  • 4 green onions, sliced
  • 2 cloves garlic, minced
  • 3-4 tablespoons soy sauce, to taste
  • Salt and pepper, to taste
  • 1 cup cooked chicken, diced or sliced (optional)
  • 1 cup cooked shrimp (optional)
  • 1 cup tofu, diced (optional)

Instructions:

  1. Gather and measure all ingredients. If using protein, ensure it is cooked and diced/sliced appropriately.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat.
  3. Add beaten eggs to the skillet. Scramble until fully cooked, then set aside.
  4. Add garlic and cook for 30 seconds until fragrant. Add frozen mixed vegetables and sauté for about 3-4 minutes.
  5. Incorporate the cooked rice, breaking up clumps. Sauté for 2-3 minutes until heated through.
  6. Stir in scrambled eggs, protein (if using), and green onions. Add soy sauce and toss to combine; adjust seasoning with salt and pepper.
  7. Remove from heat and serve hot, garnished with extra green onions if desired.
