Ingredients:

  • 350 g gluten-free plain flour (approximately 2 ¾ cups)
  • ½ teaspoon salt (or to taste)
  • 1 teaspoon baking soda (bicarbonate of soda)
  • 200 ml milk (approximately ¾ cup)
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat your oven to 200°C / 180°C fan / gas mark 6 / 400°F. Dust the non-stick baking tray with a little gluten-free flour.
  2. In a large bowl, mix together the gluten-free flour, salt, and baking soda until well combined.
  3. In a jug, combine the milk and apple cider vinegar, and stir lightly.
  4. Pour the milk mixture into the dry ingredients and stir until just combined.
  5. Allow the mixture to rest for 5 minutes.
  6. Bring the dough together to form a ball using your hands. It should not be too wet or sloppy. Adjust with more water or flour if needed.
  7. Roll the dough into a smooth ball, place it on the prepared baking tray, flatten it slightly, and use a knife to cut a deep cross into the top.
  8. Sprinkle a little gluten-free flour on top of the loaf.
  9. Place in the preheated oven and bake for 25-30 minutes or until golden brown and cooked through.
  10. Ideally, serve warm right out of the oven!
