Ingredients:
- 350 g gluten-free plain flour (approximately 2 ¾ cups)
- ½ teaspoon salt (or to taste)
- 1 teaspoon baking soda (bicarbonate of soda)
- 200 ml milk (approximately ¾ cup)
- 1 tablespoon apple cider vinegar
Instructions:
- Preheat your oven to 200°C / 180°C fan / gas mark 6 / 400°F. Dust the non-stick baking tray with a little gluten-free flour.
- In a large bowl, mix together the gluten-free flour, salt, and baking soda until well combined.
- In a jug, combine the milk and apple cider vinegar, and stir lightly.
- Pour the milk mixture into the dry ingredients and stir until just combined.
- Allow the mixture to rest for 5 minutes.
- Bring the dough together to form a ball using your hands. It should not be too wet or sloppy. Adjust with more water or flour if needed.
- Roll the dough into a smooth ball, place it on the prepared baking tray, flatten it slightly, and use a knife to cut a deep cross into the top.
- Sprinkle a little gluten-free flour on top of the loaf.
- Place in the preheated oven and bake for 25-30 minutes or until golden brown and cooked through.
- Ideally, serve warm right out of the oven!
