Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 medium zucchini, diced
- 400 grams Quorn mince
- 1 can diced tomatoes (400 grams)
- 2 tablespoons tomato purée
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 320 grams pasta of your choice
- Grated Parmesan cheese, optional
Instructions:
- Boil water in a large pot.
- Add pasta and cook according to package instructions until al dente.
- Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic; sauté for 2-3 minutes until softened and fragrant.
- Add diced carrot and zucchini; cook for 3-4 minutes until just tender.
- Stir in Quorn mince, cook for 2-3 minutes until heated through.
- Add diced tomatoes, tomato purée, oregano, basil, salt, and pepper.
- Stir well and simmer for 5-7 minutes, allowing flavors to meld.
- Toss cooked pasta into the sauce, mixing well to coat.
- Serve with grated Parmesan cheese if desired.
