Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium zucchini, diced
  • 400 grams Quorn mince
  • 1 can diced tomatoes (400 grams)
  • 2 tablespoons tomato purée
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 320 grams pasta of your choice
  • Grated Parmesan cheese, optional

Instructions:

  1. Boil water in a large pot.
  2. Add pasta and cook according to package instructions until al dente.
  3. Drain and set aside.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add onion and garlic; sauté for 2-3 minutes until softened and fragrant.
  6. Add diced carrot and zucchini; cook for 3-4 minutes until just tender.
  7. Stir in Quorn mince, cook for 2-3 minutes until heated through.
  8. Add diced tomatoes, tomato purée, oregano, basil, salt, and pepper.
  9. Stir well and simmer for 5-7 minutes, allowing flavors to meld.
  10. Toss cooked pasta into the sauce, mixing well to coat.
  11. Serve with grated Parmesan cheese if desired.
