Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- ½ tsp (3g) salt
- 2 large eggs
- ½ cup (120ml) vegetable oil
- ¾ cup (180ml) whole milk
- 1 tbsp (15ml) pure vanilla extract
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) milk or heavy cream
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease your pan and line the bottom with parchment paper.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until no clumps remain.
- Create a well in the center of the dry ingredients and pour in the eggs, vegetable oil, whole milk, and vanilla extract.
- Whisk gently until the batter is smooth. Stop mixing the moment the flour disappears to ensure the cake remains fluffy.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 30–35 minutes until the edges slightly pull away from the pan and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- For the optional glaze, whisk together powdered sugar, milk or heavy cream, and vanilla extract until smooth, then drizzle over the cooled cake.
