Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 tsp (10g) baking powder
  • ½ tsp (3g) salt
  • 2 large eggs
  • ½ cup (120ml) vegetable oil
  • ¾ cup (180ml) whole milk
  • 1 tbsp (15ml) pure vanilla extract
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) milk or heavy cream
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until no clumps remain.
  3. Create a well in the center of the dry ingredients and pour in the eggs, vegetable oil, whole milk, and vanilla extract.
  4. Whisk gently until the batter is smooth. Stop mixing the moment the flour disappears to ensure the cake remains fluffy.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 30–35 minutes until the edges slightly pull away from the pan and a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. For the optional glaze, whisk together powdered sugar, milk or heavy cream, and vanilla extract until smooth, then drizzle over the cooled cake.
