Ingredients:
- 1 box (15.25 oz / 432g) white or yellow cake mix (plus ingredients called for on the box)
- Vegetable oil and flour for greasing and dusting the pan
- 3 boxes (3 oz / 85g each) different flavors of Jell-O (e.g., Strawberry, Lime, Blue Raspberry)
- 3 cups (710ml) boiling water
- 1 ½ cups (355ml) cold water
- 1 container (8 oz / 227g) frozen whipped topping, thawed
- Optional: Sprinkles for garnish
Instructions:
- Prepare cake batter according to box instructions. Bake in a greased and floured 9x13 inch pan until a toothpick inserted into the center comes out clean. Let cool slightly.
- In separate bowls, dissolve each flavor of Jell-O in 1 cup (237ml) boiling water. Stir until completely dissolved. Add ½ cup (118ml) cold water to each bowl.
- Use the handle of a wooden spoon or the back of a spatula to poke holes all over the cooled cake, about 1 inch apart.
- Carefully pour each flavor of Jell-O into the poked holes, alternating colors. Use a spoon to help the Jell-O seep into all the holes.
- Cover the cake tightly with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the Jell-O to set completely.
- Spread the thawed whipped topping evenly over the chilled cake. Garnish with sprinkles, if desired. Cut into squares and serve this delicious poke cake.
