Ingredients:
- 4 cups (600g) fresh mulberries, stemmed and rinsed
- 1 cup (150g) fresh blueberries
- 1 cup (150g) sliced strawberries
- 1 cup (150g) diced mango
- 2 tbsp (30ml) raw honey
- 1 tbsp (15ml) fresh lime juice
- 1/2 tsp (2g) lime zest
- 1 pinch (0.5g) sea salt
- 1/4 cup (60ml) creamy almond butter
- 2 tbsp (30g) hemp seeds
- 1 sprig (2g) fresh mint leaves, torn
Instructions:
- Rinse the mulberries gently in a colander using cold water and pat dry with a paper towel. Note: Excess water prevents the glaze from sticking.
- Dice the mango into uniform 1/2 inch cubes. until they are bite-sized and clean.
- In a small ramekin, whisk together the honey, lime juice, lime zest, and salt. until the mixture is velvety and the salt is dissolved.
- Place the mulberries, blueberries, strawberries, and mango in a large glass bowl.
- Drizzle the citrus glaze over the fruit.
- Using a silicone spatula, gently fold the fruit from the bottom up. until evenly coated in the glaze.
- Stop mixing the moment the berries are shiny to avoid over mixing.
- Spoon the almond butter over the top in a decorative swirl.
- Sprinkle with hemp seeds and torn mint leaves.
