Ingredients:
- 2 cups (250g) all-purpose flour
- 1 teaspoon (5g) salt
- ½ cup (115g) unsalted butter, chilled and cubed
- 1 large egg
- 1/4 cup (60ml) cold water
- 1 cup (150g) shredded cheese (cheddar or mozzarella)
- 1 cup (100g) cooked and crumbled sausage or mushrooms (for vegetarian)
- 1/2 cup (75g) finely chopped spinach or kale
- 2 teaspoons (10g) garlic, minced
- 1/2 teaspoon (2g) black pepper
- 1 teaspoon (5g) dried oregano
Instructions:
- In a bowl, combine flour and salt.
- Add chilled butter and use a pastry cutter to mix until crumbly.
- In a separate bowl, whisk together egg and water, then add to flour mixture.
- Mix until dough is just combined, shape into a disc, wrap in plastic, and refrigerate.
- In a sauté pan, heat olive oil and sauté garlic until fragrant.
- Add sausage/mushrooms, cook until browned.
- Stir in spinach, pepper, and oregano. Remove from heat and let cool.
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment.
- Roll out dough on a floured surface to about 1/8-inch (0.3 cm) thick.
- Cut dough into desired shapes using cookie cutters.
- Place a small spoonful of filling in the center of each cut shape.
- Fold over edges and seal with a fork.
- Arrange bites on the prepared baking sheet.
- Bake for 20-25 minutes or until golden brown.
- Cool slightly before serving.
