Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon (5g) salt
  • ½ cup (115g) unsalted butter, chilled and cubed
  • 1 large egg
  • 1/4 cup (60ml) cold water
  • 1 cup (150g) shredded cheese (cheddar or mozzarella)
  • 1 cup (100g) cooked and crumbled sausage or mushrooms (for vegetarian)
  • 1/2 cup (75g) finely chopped spinach or kale
  • 2 teaspoons (10g) garlic, minced
  • 1/2 teaspoon (2g) black pepper
  • 1 teaspoon (5g) dried oregano

Instructions:

  1. In a bowl, combine flour and salt.
  2. Add chilled butter and use a pastry cutter to mix until crumbly.
  3. In a separate bowl, whisk together egg and water, then add to flour mixture.
  4. Mix until dough is just combined, shape into a disc, wrap in plastic, and refrigerate.
  5. In a sauté pan, heat olive oil and sauté garlic until fragrant.
  6. Add sausage/mushrooms, cook until browned.
  7. Stir in spinach, pepper, and oregano. Remove from heat and let cool.
  8. Preheat oven to 375°F (190°C) and line a baking sheet with parchment.
  9. Roll out dough on a floured surface to about 1/8-inch (0.3 cm) thick.
  10. Cut dough into desired shapes using cookie cutters.
  11. Place a small spoonful of filling in the center of each cut shape.
  12. Fold over edges and seal with a fork.
  13. Arrange bites on the prepared baking sheet.
  14. Bake for 20-25 minutes or until golden brown.
  15. Cool slightly before serving.
