Ingredients:

  • 2 pounds (900g) fresh strawberries, hulled and sliced
  • 1 pint (473ml) fresh blueberries
  • 1 tablespoon (15ml) granulated sugar (optional, for macerating strawberries)
  • 1 tablespoon (15ml) lemon juice (optional, for macerating strawberries)
  • 32 ounces (900g) vanilla Greek yogurt, plain yogurt, or coconut yogurt (for dairy-free)
  • 1/4 cup (60ml) honey or maple syrup (adjust to taste)
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 cup (50g) granola (store-bought or homemade)
  • Whipped cream or Cool Whip for topping
  • Fresh mint leaves for garnish
  • Edible star sprinkles
  • shredded coconut

Instructions:

  1. Gently wash and dry strawberries. Hull and slice the strawberries. In a bowl, combine sliced strawberries with sugar and lemon juice (if using). Let sit for 10 minutes to macerate slightly.
  2. Wash and dry blueberries. Remove any stems or bad berries.
  3. In a separate bowl, combine Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.
  4. Layer strawberries, yogurt mixture, and blueberries in the glasses or cups, repeating layers until the glasses are full. Start with a layer of strawberries, then a layer of yogurt, and finally a layer of blueberries.
  5. Cover the parfaits with plastic wrap or foil and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  6. Top with granola (if using), whipped cream or Cool Whip, fresh mint leaves, and/or edible star sprinkles before serving.
