Ingredients:
- 2 pounds (900g) fresh strawberries, hulled and sliced
- 1 pint (473ml) fresh blueberries
- 1 tablespoon (15ml) granulated sugar (optional, for macerating strawberries)
- 1 tablespoon (15ml) lemon juice (optional, for macerating strawberries)
- 32 ounces (900g) vanilla Greek yogurt, plain yogurt, or coconut yogurt (for dairy-free)
- 1/4 cup (60ml) honey or maple syrup (adjust to taste)
- 1 teaspoon (5ml) vanilla extract
- 1/2 cup (50g) granola (store-bought or homemade)
- Whipped cream or Cool Whip for topping
- Fresh mint leaves for garnish
- Edible star sprinkles
- shredded coconut
Instructions:
- Gently wash and dry strawberries. Hull and slice the strawberries. In a bowl, combine sliced strawberries with sugar and lemon juice (if using). Let sit for 10 minutes to macerate slightly.
- Wash and dry blueberries. Remove any stems or bad berries.
- In a separate bowl, combine Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.
- Layer strawberries, yogurt mixture, and blueberries in the glasses or cups, repeating layers until the glasses are full. Start with a layer of strawberries, then a layer of yogurt, and finally a layer of blueberries.
- Cover the parfaits with plastic wrap or foil and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Top with granola (if using), whipped cream or Cool Whip, fresh mint leaves, and/or edible star sprinkles before serving.
