Ingredients:

  • 2 large cucumbers (approximately 600g total)
  • 1 small red onion, thinly sliced (about 100g)
  • ½ cup grape tomatoes, halved (about 75g)
  • ¼ cup fresh dill, chopped (about 10g)
  • 3 tablespoons extra virgin olive oil (45ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 tablespoon fresh lemon juice (15ml)
  • 1 teaspoon honey (5g), optional
  • Salt and pepper to taste

Instructions:

  1. Wash the cucumbers and tomatoes thoroughly.
  2. Thinly slice the cucumbers using a sharp knife or mandoline.
  3. Slice the red onion and halve the tomatoes.
  4. In a small mixing bowl, combine olive oil, apple cider vinegar, lemon juice, honey (if using), salt, and pepper. Whisk until well blended.
  5. In a large mixing bowl, combine the sliced cucumbers, red onion, and grape tomatoes.
  6. Drizzle the dressing over the salad and toss gently to coat.
  7. Add freshly chopped dill to the salad and toss again to distribute evenly.
  8. Taste the salad and adjust the seasoning with more salt or pepper as needed.
  9. Let the salad sit for a few minutes or refrigerate for 30 minutes to allow flavors to meld before serving.
