Ingredients:

  • 1 cup high-quality extra virgin olive oil
  • 2 tablespoons aged balsamic vinegar of Modena
  • 1 tablespoon fresh lemon juice
  • 4 cloves garlic, finely minced
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 tablespoon fresh Italian parsley, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon coarse sea salt
  • 0.5 teaspoon cracked black pepper

Instructions:

  1. In a shallow serving dish, combine the minced garlic and sea salt. Use the back of a spoon to mash them together slightly to draw out the garlic juices and mellow the raw bite.
  2. Sprinkle the dried oregano, red pepper flakes, black pepper, and fresh rosemary over the garlic mixture. Drizzle the lemon juice and balsamic vinegar directly over the spices to bloom the aromatics.
  3. Slowly pour the extra virgin olive oil over the mixture. Use a small whisk or a fork to gently combine. Allow the dip to sit for 10 minutes before serving to ensure osmotic infusion of the herbs.
