  • 4 ripe medium tomatoes, diced

  • 1/4 cup fresh basil leaves, chopped

  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste
  • 1 baguette or Italian loaf, sliced into 1/2-inch thick pieces

Instructions:

  1. In a mixing bowl, combine diced tomatoes, minced garlic, and chopped basil.
  2. Drizzle in the balsamic vinegar and olive oil; season with salt and pepper. Gently fold the mixture together until well coated.
  3. Preheat your oven to 400°F (200°C). Arrange bread slices on a baking sheet.
  4. Lightly brush with olive oil if desired, then toast in the oven for about 5 minutes or until golden brown.
  5. Remove the toasted bread from the oven and let it cool slightly.
  6. Spoon the tomato mixture generously onto each slice of bread. Serve immediately.
