Ingredients:
- 1 lb (450g) Smoked Sausage, sliced
- 1.5 lbs (680g) Yukon Gold Potatoes, diced
- 1 large Onion, thinly sliced
- 1 Bell Pepper, diced
- 2 cloves Garlic, minced
- 2 tablespoons Olive Oil
- 1 teaspoon Dried Italian Herbs
- ½ teaspoon Smoked Paprika
- Salt and pepper to taste
- 2 tablespoons Fresh Parsley, chopped
- Optional: Butter
- Optional: White wine vinegar
Instructions:
- Dice potatoes, slice onion and sausage, dice bell pepper, and mince garlic.
- In a bowl, combine potatoes, onion, bell pepper, garlic, olive oil, herbs, paprika, salt, and pepper. Toss.
- Place foil sheet, divide potato mixture, top with sausage. Add butter if desired.
- Seal foil tightly, leaving space for steam.
- Oven: Preheat to 400°F (200°C). Bake 30-40 min. Grill: Medium heat, 30-40 min, turning.
- Carefully open (steam!), garnish with parsley, and serve.
