Ingredients:

  • 1 lb (450g) Smoked Sausage, sliced
  • 1.5 lbs (680g) Yukon Gold Potatoes, diced
  • 1 large Onion, thinly sliced
  • 1 Bell Pepper, diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Italian Herbs
  • ½ teaspoon Smoked Paprika
  • Salt and pepper to taste
  • 2 tablespoons Fresh Parsley, chopped
  • Optional: Butter
  • Optional: White wine vinegar

Instructions:

  1. Dice potatoes, slice onion and sausage, dice bell pepper, and mince garlic.
  2. In a bowl, combine potatoes, onion, bell pepper, garlic, olive oil, herbs, paprika, salt, and pepper. Toss.
  3. Place foil sheet, divide potato mixture, top with sausage. Add butter if desired.
  4. Seal foil tightly, leaving space for steam.
  5. Oven: Preheat to 400°F (200°C). Bake 30-40 min. Grill: Medium heat, 30-40 min, turning.
  6. Carefully open (steam!), garnish with parsley, and serve.
